Rawon or Rawon Rice (because it is often served with rice or "Black Soup" is a meal con­sisting of spe­cial spicy beef soup con­tain­ing keluak (fruits of kepayang tree used as a spice). It is a well-known food from Eastern part of Java, especially in Surabaya. But, it also known as a spe­cial food of east­ern part of Central Java, in Surakarta region.
Com­monly, the beef is cut into dice sizes. The spicy soup is made of ground mix­ture of spices such [sereh, jeruk purut] sauted with some spices such salt, sugar, leeks, and so on, then cooked in oil until it is aro­matic. Then the spice is poured into boiled stock along with beef. The spe­cial dark/black color of rawon comes from keluak as prime spice. It is served with rice, com­pleted with small bean sprouts, leek, chips, and sambal.
The picture tells us about Rawon Setan (Devil's Rawon). The only reason for this nickname is because the warung (stall) is open in the midnight to dawn just like the time when devils come out. The Rawon Setan stall, is quite popular in Surabaya. We can eat the Rawon together with some additional side dish such as fried lung, kidney, or brain of a cow.
